Recipe: Delicious Boxing Day Butties

Rather than using up all that leftover turkey in a pie or curry, why not brighten up your Boxing Day lunch this year with this delicious roll? It’s easy, quick and healthy and will use up that turkey in a way that everyone will love. I originally saw it on a Jamie Oliver show and adapted to suit us.

It takes about 20 minutes from start to finish and can be eaten as a roll, sandwich or as meat and salad type dish. Plus over the festive period, you will probably have everything you need in the cupboards and fridge.

Ingredients

Leftover turkey
Leftover chicken or turkey gravy (I used chicken)
2 carrots, grated or thinly sliced into matchsticks
2 apples, grated or thinly sliced into matchsticks
1 small red onion, thinly sliced
3 sprigs of fresh mint, leaves thinly sliced
4 gherkins, thinly sliced
3 red chilli (optional), thinly sliced
Buns/Bread

For the BBQ sauce

4 tbsp tomato ketchup
2 tbsp HP sauce
2 tsp English mustard
1/2 tsp Tabasco (optional)
A good splash of Worcestershire sauce

Method

Firstly I pulled apart the turkey using two forks and shredded it the same way you would for crispy duck, I plonked it into a saucepan with a little gravy (about half a cup) and heated it really gently on very low heat, stirring occasionally for about ten minutes.

Meanwhile, I mixed the mint, carrot, apple, gherkin and chilli into a bowl, I added about two/three tbsp of the juice from the gherkin jar and mixed in and then set aside.

For the BBQ sauce, I simply mixed all the required ingredients together and gave it a good stir.

To serve, I lightly toasted the buns and then spread a good dollop of the sauce at the bottom, followed by a generous amount of turkey together with a tsp or so off the gravy. Finally, I chucked the slaw on top and finished with the top of the bun. I also put a jug of gravy on the table for dipping the bread if any was left.

This could be served alone or alongside homemade wedges, or perhaps a selection of snacks too. Really versatile and more importantly, really yummy.

The slaw and sauce can be easily upsized by simply doubling the ingredients. So don’t waste your Christmas Holidays making boring curries and pies. Sit back and enjoy this fabulous Christmas bun.
