Finishing work and before the afternoon school run seems to be a great time to pick up yellow sticker bargains at my local supermarket and today didn’t fail me. Part of my haul was four large chicken legs for £2.20 and I knew just the recipe. Easy, quick and affordable.
Ingredients (Serves 2-3)
4 Chicken Legs, cut into thighs and drumsticks. £2.20
200g thin stemmed broccoli (also yellow sticker). £1.25
4 garlic cloves, thinly sliced. Less than 10p
Thumb sized piece of ginger, grated. 11p
2 lemons, 1 for the juice and the other cut into 8 bits. 60p
The rest I had in the cupboard but would come to a few pence each I guess.
3 tbsp soy sauce
1 tbsp clear honey
1 tbsp sesame seeds
1 tsp sesame oil
Rice, cooked as per instructions. 50p
I promised quick and easy, how would two steps and 45 minutes sound?
Heat the oven to 180 degrees and plonk the chicken and lemon chunks into a large roasting tray. Season the meat and chuck it in the oven for 30 minutes. With nothing else to do for 25 minutes, it was painting and on Youtube with the little lady.
After 25 minutes and a quick wash of the hands, I steamed the broccoli for about three minutes during which time I mixed the soy, lemon juice and honey together in a cup.
I then simply placed the broccoli around the chicken, chucked the garlic and ginger over it. Then I poured the soy mix over the top and back in the oven it went for another 15 minutes (or until the chicken is cooked through).
Before serving I drizzled the sesame oil over the top. Finally, I served it with some rice.
And there we have it, a quick, easy and very tasty meal for well under a fiver and the kids loved it! It really jazzed up the chicken and was simple to make. Enjoy!
